About the Concept

  • Al Dente Moderna is a new refined Italian dining concept under Al Dente Food Group. It’s focused, structured, and technical. Fewer seats, tighter execution, and a menu that mixes classic Italian methods with subtle local touches. Clean service, proper brigade, and no shortcuts.


  • We’re looking for a Chef de Partie with solid culinary training and real kitchen discipline. This role requires independence, speed, and technical execution. You’ll own your station from prep to service, contributing to a high-performance team in a modern open kitchen.


  • Manage your station independently: mise en place, prep, service, and cleanup
  • Follow recipes, portion control, and plating standards precisely
  • Coordinate with Sous Chef and Executive Chef for smooth service and consistency
  • Maintain station cleanliness and organization at all times
  • Participate in menu R&D, tastings, and seasonal tests
  • Adhere strictly to food hygiene and HACCP standards

Requirements

  • Graduate of a culinary school OR at least 2 years in a fine dining or Michelin-level kitchen
  • Minimum 2 years of experience in à la carte service as Chef de Partie or strong Demi
  • Strong knowledge of Italian techniques: sauces, stocks, pasta, slow roasting
  • Experience with fermentations, aging, reductions is a plus
  • Clean, fast, and structured in execution
  • Team player with respect for kitchen hierarchy
  • Willing to work evenings, weekends, and long shifts
  • Basic spoken English for kitchen communication
